SCALLOP TARTARE

with caviar and chive

Ingredients

 

Serving size 2 people

4 large sea scallops, rinsed and dried

1 lime, zested and squeezed

1/2 lemon, zested and squeezed

1 tbsp fresh mint, finely chopped

1 tbsp fresh chives, chopped

1 tsp habanero, minced

1 tsp jalapeño, minced

1 tsp, red chili, minced

2 tbsp olive oil

salt and pepper

optional: caviar

 

Recipe

 

Rinse and thoroughly dry scallops. With a very sharp knife, brunoise each scallop and place in a small mixing bowl.

Add the minced habanero, jalapeño, and chili along with chopped chives and mint. Zest and squeeze lemon and lime. Add olive oil, salt and pepper and combine.

Cover and let flavors meld for 30 minutes in fridge.

Remove, let temper and plate.
