CAJUN SPICED SHRIMP TACOS

with a spicy aioli

Ingredients

 

Serving size 4 tacos

1 lb medium gulf or key west shrimp, peeled, rinsed, deveined, and dried

4 corn and flour tortillas

1/4 cup cajun seasoning (paprika, onion powder, garlic powder, salt and pepper)

2 limes, one juiced one quartered

1/4 cup mayonnaise

2 tbsp sriracha

1 tbsp lemon juice

1 clove garlic, grated

2 tbsp olive oil

1 avocado, sliced

1 cup shredded red cabbage

1 jalapeño, thinly sliced and seeded

1/4 cup cilantro, for garnish

salt and pepper

Serving size 4 tacos

In a mixing bowl, combine shrimp, cajun spices, lime juice and olive oil. Toss to fully coat. Let marinate for at least one hour.

For the aioli, combine mayonnaise, sriracha, grated garlic and lemon juice. Mix until smooth.

In a sauce pan on high heat, cook the shrimp 3-5 minutes (do not over cook).

Warm the tortillas in a pan on medium-high heat for 1 minute each side.

Plate one tortilla, 6-8 shrimp, a few slices of avocado, small handful of shredded cabbage, 3-4 jalapeño slices, and top with spicy aioli. Garnish plate with a small bunch of cilantro and a lime wedge.
