PENNE ALLA VODKA
Ingredients
Serving size 2 people
2 cups dried penne pasta, cooked al dente per package instructions
1 cup tomato puree
1/4 cream
1 shot vodka
1/2 white onion, diced
3 cloves garlic, minced
fresh basil chiffonade, for garnish
freshly grated parmesan
salt and pepper
Recipe
Cook penne pasta per package instructions, to al dente.
In a sauce pan over medium/high heat add olive oil, onions and garlic. Sauté until onions are translucent. Add tomato puree. Bring to boil. Add vodka, boil the alcohol off. Stir in cream. Salt and pepper to taste.
Reserve 1/4 cup pasta water. Strain pasta and add to sauce with pasta water. Turn heat to high and toss pasta until fully coated and sauce is slightly reduced.
Plate and garnish with freshly grated parmesan and basil.
