SPICE CRUSTED FLANK STEAK
with chimichurri
Ingredients
serving size 2 people
1 lb flank steak
1 tbsp each cumin, coriander, cayenne
1 tbsp each fresh oregano, parsley, mint
1 garlic clove, minced
1/2 shallot, minced
1/4 cup olive oil
1 tbsp sherry vinegar
1/2 lime, squeezed
2 tbsp canola or vegetable oil
1/2 container baby spinach (or other greens)
salt and pepper
Recipe
Mix coriander, cumin, cayenne, salt and pepper. Generously coat both sides of the flank steak.
Chop the oregano, parsley and mint. Combine with olive oil, sherry vinegar, lime juice, garlic, and shallot. Add salt and pepper to taste. This is your chimichurri.
Add canola oil to a large non-stick pan on high heat. Sear each side of the flank steak for 3-4 minutes. Remove and let rest.
Toss spinach (or other greens) in olive oil, salt and pepper.
Slice steak and plate over greens. Spoon chimichurri sauce on top.
