AVOCADO TOAST

with smoked salmon topped with a poached egg and micro-greens

 

Ingredients

 

serving size 2 people

1 avocado

smoked salmon or lox

2 slices of seed bread, toasted

2 eggs

2 tbsp white wine vinegar

1 tbsp olive oil

microgreens

salt and pepper

 

Recipe

 

Toast two slices of seed bread.

Fill a sauce pan half way with water and bring to a boil. Add white wine vinegar and bring back to a boil. Crack one egg into a small dish and gently place into boiling water. Do the same with the second egg. Cook 2.5 minutes keeping the eggs separated. Scoop out with a slotted spoon and let rest on a plate covered in paper towel to dry.

Drizzle toast with olive oil. Top with smoked salmon, avocado, poached egg, salt and pepper. Add micro greens for garnish.
